Much livelier and crisper than the 1990 but with a more complex bouquet too. Focussed, tight still – incredible! - presumably a reflection of the exceptionally low yield. Extremely Pinot Noir – this wine has such innate energy that it revived palates flagging halfway through a particularly long feast (poor us), not least because it seemed such a perfect match with the salmon and liquorice.

Dom Perignon named after a 17th century Benedictine monk who was an important quality pioneer for Champagne wine.
A rigorous selection process in both the vineyard and winery ensures that only the best grapes go into Dom Pérignon champagne. The final composition changes every vintage: at times a blend in perfectly equal proportions, at times up to 60% Chardonnay or 60% Pinot noir.
