Using only the highest appraised Tojo A Yamadanishiki grown in Hyogo prefecture, fermented slowly and expertyly at frigid temperatures with Oigawa susoil water accumulated from snowmelt from the Southern Alps, there is an ever so delicate sweetness and an enticing sharpness from average acidity. The aroma is refreshing and unobtrusive adding to its true compatibility with a meal.
